This coffee is from the Ethiopia’s most Western province of Illubabor. Sota is not your typical Ethiopian coffee – its cup profile has been described as having “dark sweetness.” This can be described as something like date and raisin, but they come along with flavors of sugar cane and raw honey. This coffee has a dense body but has a sparkling acidity to it as well. This coffee has fantastic balance of sweetness, mouthfeel, and acidity at any roast level. We mainly roast Sota in the medium range, but from time to time we will try it at other levels as well. This coffee will make a great Single Origin Espresso.
